STORY
While plans for the distillery started in the mid 1990s, the Huber family was inspired by their ancestors who once distilled brandies in this area in the mid 1800s. President and Head Distiller Ted Huber, and his co-owner, CEO Greg Huber, spent multiple years researching and working with legislators in Indianapolis to pass important legislation that would allow Huber’s to produce both wine and brandy. Once this legislation was passed, Starlight Distillery became operational in 2001 with its 80-gallon Christian Carl pot still (which is still used to this day). In 2013, Indiana state law evolved to allow craft distilleries to produce grain spirits, enabling the Hubers to produce bourbon, rye whiskey, and other types of whiskies. Traditional practices have been passed on through seven generations and the Huber’s mission is simple: to produce smallbatch, hand-crafted, distilled spirits of high quality.
SELECTED PRODUCTS
- Carl T. Bourbon, named after the owners’ grandpa, is produced primarily from corn grown on 50 acres of the Huber’s 650-acre estate. The result is a bourbon whiskey that is elegant and sweet, an easy sipper neat or on the rocks.
- Apple Brandy is made from homegrown apples using traditional European artisanal methods. This product is aged in French and Hungarian oak casks and acquires nuanced aromas of vanilla, spice and toffee.
- 31 Stars Vodka goes from grain to bottle on Huber’s farm. The vodka is named after the distilled spirits plant number, DSP-IN-31 and “Stars” relating to the community of Starlight.
- Simon’s “1794” Gin has hints of vanilla, citrus and spicy botanicals, and is distilled in the original 80-gallon copper pot still imported from Germany in the late 1990s. Named for the birth year of founder Simon Huber.
SUSTAINABLE PRACTICES
Starlight Distillery has a unique barrel portfolio which allows our distillers to create fascinating terroir-driven bourbons along with blends for finishing barrels. These projects offer our consumers unique and well-crafted bourbon selections year-round. One of our most unique projects aligns with Starlight Distillery’s priority of sustainability on the farm. Honeybees play an important role in pollinating our orchards. As a result, Huber’s has several hives located on our estate that assist in the pollination process and are now used to season our bourbon barrels. The result is our “Honey Finished” bourbon, which is one of our most popular finishing barrels in the Starlight Distillery lineup. BEYOND THE DISTILLERY
Huber’s has grown and diversified into one of the largest agritourism businesses in the entire Midwest region. In addition to Starlight distillery, Huber’s features Starlight Café, a farmers’ market, the winery, event and children’s spaces, and many U-Pick opportunities throughout the year. Worth Noting

- In each issue of Whisky Advocate, the editors select three great value bottles. For the Summer 2021 issue, they selected and profiled Carl T. Huber Signature Indiana Straight Bourbon Whiskey.
- Huber vineyards will produce nearly 400,000 pounds of grapes per year under normal weather conditions.
- Starlight Distillery will be adding another copper pot still and two more rickhouses to help increase whiskey production.
