The Audacity to Launch During a Pandemic
Opening a new restaurant is a daunting project, but starting one during a pandemic presents even more significant challenges. Many new restaurants have broken ground in Kentucky and Southern Indiana this year, showing that with great determination and a little creativity, anything is possible. For some owners, it’s their first venture into the food scene, but others are seasoned pros with significant restaurant experience. However, most of them started laying plans for their businesses long before the word “pandemic” was on everyone’s lips, and continued with their commitment even when everything suddenly changed earlier this year.
To get their businesses rolling during the pandemic, most owners relied heavily on carryout options, which provided a consistent means of conveying food to customers even when they were forced to close due to rising COVID cases. Several also made use of outdoor spaces to set up socially distanced, safe seating for their customers. Although some found it was tricky to get the word out about their restaurant opening, most found plenty of hungry customers eager to try new food options. With the support of their community, family and friends, and new loyal customers, many of these restaurants are busy even in these challenging times.
