Information and data, so readers can learn how to make good decisions. Sharing of favorite recipes and tips related to growing foods we all can share, creating new moments of discovery.
Eating—Omnivore, vegetarian, pescatarian, flexitarian: Those are all fine, but the approach we are most eager to suggest to our readers is to become a giveashitarian. Continue to show our readers that becoming one means understanding where meat and produce comes from and how animals were raised; building a deeper awareness among our readership of terms like natural, GMO, bee colony collapse, certified organic and miles traveled. It’s a continuous journey, not a destination, given misleading corporate marketing.
Champions—People think we write about food. While this is somewhat true, we are really writing about people. These are often the people doing growing, preparing and serving food for us for low pay and without effective healthcare or retirement plans. These are the men and women who work the land to make our home cooking and local dining so unique, nutritious and delicious. They are the champions to celebrate each issue.
Digital is good; print is better—Nothing beats holding a high-quality publication in your hand.
It means that 12 years in, Edible Kentucky is still evolving and there is much more to learn, many more stories to tell, ideas to share.
