Making Beet Ice Cream Video
Beet Ice Cream video from the Spring, 2018 issue.
Cut up bananas and beets into small pieces before freezing them (unless purchasing frozen beet pieces). Refrigerate the can of coconut milk.
Combine all ingredients into a high-speed blender or food processor. Blend until a creamy consistency is achieved. You may need to stop the blender as needed to loosen ingredients.
Enjoy immediately as a soft-serve consistency or keep in the freezer and enjoy later.
For a healthier alternative to the Magic Shell® coating, soak the coconut butter jar in a bowl of warm water to melt, then drizzle melted coconut butter on top and sprinkle with walnuts.
