- 1 cup whole wheat berries
- 1 teaspoon salt
- ½ cup Orange-Cumin Salad Dressing (or dressing of choice)
- 2 oranges or mandarins
- 1½ cups cooked or canned black beans, drained
- 18 to 24 whole green salad olives (substitute imported black, if desired)
- 1 cup peeled red bell peppers
- 2 cups cooked sliced or shredded chicken (or tofu squares)
- 6 cups/handfuls spring mix (or preferred salad green)
Preparation
• Combine whole wheat berries with salt and 2 cups water in a small saucepan. Bring to a boil over high heat. Cover, reduce heat to low and simmer until liquid is absorbed and the berries are al dente, 50 minutes or so. Remove from heat, fluff with a fork and place in a large bowl. Stir in salad dressing to coat grain. Peel and section oranges and add to bowl, along with beans, olives, peppers and chicken.
• Place greens on a large platter or individual bowls. Top with grain mixture. Drizzle with additional dressing if desired.
