Patties
- 5 pounds ground pork
- 1 tablespoon cumin
- 1 tablespoon black pepper
- 1½ teaspoons garlic powder
- 1½ teaspoons oregano
- 1 tablespoon Old Bay seasoning
- 1½ teaspoons red pepper flakes
- 1 tablespoon ancho chile powder
- 1 tablespoon cayenne powder
- 1 tablespoon plus 1½ teaspoons salt
- 3 ounces red wine
- 2 tablespoons paprika
Salad
- 5 pounds small red potatoes
- 1 dozen hard-boiled eggs, peeled
- ½ cup diced onion
- ¾ cup diced celery
- ¼ cup diced red pepper
- 1 cup mayo
- 2 teaspoons brown mustard
- Salt to taste

Instructions
For the Patties:
Mix all ingredients together thoroughly. Let chill overnight, Form into patty for burgers. The mixture also works well in breakfast burritos.
For the Egg Salad:
Boil potatoes to just soft; drain. In large bowl, dice potatoes to bite-size pieces. Dice the eggs and add to potatoes. Add all other ingredients and mix together.
