Useful on pasta, vegetables, baked potatoes, in soups, over fish and as a side to grilled meats. Best used immediately at room temperature, but will keep, covered, in the fridge for a week.

Ingredients

SERVINGS: Makes ½ cup
  • 2 big garlic cloves, finely minced or smashed
  • ½ cup flat-leaf parsley, de-stemmed, minced and packed
  • 1 tablespoon grated lemon zest (yellow part of peel)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

Combine ingredients and serve as a relish with grilled or braised meats or stews.
