Pints and Union

After 31 years in the hospitality field, a visit to Chicago years ago helped me realize I wanted to own my own restaurant. Originally, I wanted to create a bohemian French creperie. That thought evolved over the years, going back to my younger days and wanting to establish a progressive Old World Pub. The desire to influence society and not accept the negativity of modern culture — past and present — was the driving force, to create true community and a safe place for all walks of life.

I started my career as a bus boy at a California pizza shop in the late 80’s. As a skater kid in Orange County, I skated to work at 15 years old, ate for free, made enough money to go to the local taco shack and buy more Vans shoes.

We moved to Louisville in 1991. I tried other fields, including the military, but always came back to restaurants. Working every position, including years in management, prepared me for this new venture. I watched society and our industry change. The one thing that spoke to me was simple: it wasn’t about new and huge concepts — the real unifier was the food. Food transcends religious, political, gender, country, any and all barriers. It is the one great unifier that brings us all together, takes down our guard, and makes us all equal, humble, and connected.

Our goal at Pints & Union has always been to have our beer equal in excellence to our cocktails, our food as great as our atmosphere, and our service to be welcoming to everyone. Here we come together and enjoy hospitality and share who we are and who we hope to become. Or simply make new friends and not feel alone.

The story is not mine to carry or to take credit for alone. I am simply grateful I got to be a part of this journey.
