As all good chefs know, the key to a delicious meal is not just gathering ingredients; it’s about sourcing the best ingredients. For Chef Mike Wajda at Everyday Kitchen, sourcing from local farmers and artisans is at the heart of blending regional comfort cuisine for the modern food lover.

“My philosophy on food and restaurant culture wouldn’t exist without local growers. Building the relationships with farmers is one of the many things that make me excited to live in Kentucky,” says Wajda. “The close proximity to the farms and ingredients, building the relationship to grow and raise special ingredients to our specs, is so special to me.”

As the former chef at Proof on Main Restaurant, Wajda has been surrounded with great farmers who have helped inspire his commitment to design cuisine using seasonal ingredients.

“The feeling of giving back to the farming community is deeply rooted back to my childhood. Raising and harvesting from my parents’ garden or them offering my labor to neighboring farmers as a farmhand over the summers. Visiting farms now or speaking to the farmers themselves still inspires me and my menu at Everyday Kitchen on a regular basis,” he says.

Everyday Kitchen’s summer menu sources from the following farms:

    strawberries, sweet potatoes, green garlic, radishes, beans, carrots
  • Rivercrest Farm (Prospect, KY):
    chicken, beef
  • 3D Valley Farm (Depauw, IN):
    eggs, pork, maple sugar, maple syrup
  • Farmer Joe’s (Salvisa, KY):
    beef, duck
  • Spring Valley Farms (Holland, KY):
    elderberry jam
  • Frondosa Farms (Simpsonville, KY):
    mushroom varieties
  • Groganica Farms (Louisville, KY):
    aquaponic lettuce
  • Happy Sprouts Farm (Taylorsville, KY):
    microgreens

Stay tuned for expanded hours as Everyday Kitchen begins serving brunch, lunch and happy hour events. Reservations are recommended and available through the Everyday Kitchen website.
