- 1 pound carrots
- 2 tablespoons olive oil or vegetable oil
- 1 teaspoon salt
- 1 teaspoon garam masala
- ½ teaspoon chili powder (preferably ancho)
Preparation
Heat oven to 400°F. Peel the carrots and cut them into batons about 3 inches long and ½ inch wide (don’t worry too much about precision). Spread them on a wide, shallow baking dish. Drizzle with oil, sprinkle with seasonings. Stir to distribute the ingredients evenly. Bake 10 minutes, stir and bake 10 more minutes, or until carrots are browning well.
